GoldRush is one of the best keeping apples (along with Fuji, Evercrisp and Pink Lady), staying crisp well into spring. At harvest, the apple is very tart, but then becomes much sweeter in storage while retaining it's flavor. The fruit this year is small, but still very flavorful.
